Recipe for Double Chocolate Zucchini MuffinsThese zucchini muffins with extra chocolate are amazing!
The perfect snack for this time of year is dark chocolate muffins topped with melted chocolate chips and grated zucchini.
We all adore them tremendously!
1 ½ cups all purpose flour ½ cup unsweetened cocoa powder 1 teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 2 large eggs
1 cup granulated sugar ½ cup milk ½ cup avocado oil 2 teaspoons vanilla extract 1 ½ cups grated zucchini, squeezed and liquid drained 1 ½ cups chocolate chips
Start the oven at 375 degrees Fahrenheit. Put liners in a muffin tray.
Mix the flour, baking powder, cocoa powder, soda, and salt in a small bowl.
Whisk the eggs and sugar together in a large bowl. Add the oil and milk and whisk. Add the vanilla essence and whisk.
Add the dry ingredients and stir until barely incorporated. Add the zucchini and stir. Add the chocolate chunks and stir.
Half of the muffin liners should be filled. In order for a tester placed in the center to come out clean, bake for 18 to 22 minutes.
Before serving, allow to cool.
