Pasta with tomato & hidden veg sauce

Get your family to eat more vegetables with this super healthy pasta sauce recipe, which contains 5 of your daily requirements.  

The sauce can also be frozen. 

– 1 tsp olive oil – 1 large onion, chopped – 2 celery sticks, chopped – 2 carrots, chopped – 1 leek, chopped – 2 peppers, deseeded and chopped

Ingredient

– 2 cans chopped tomatoes with garlic – 1 tbsp each caster sugar and balsamic vinegar – 300g dried pasta shape – parmesan, shaved, and rocket, to serve (optional)

In a large nonstick saucepan, heat the oil and gently sauté the onion, celery, carrots, and leek for 20 minutes, or until tender. 

Method

Cook for another 10 minutes with the peppers before adding the tomatoes, sugar, and vinegar. Simmer for at least 20 minutes; the longer, the better. 

Cook the pasta according to the package instructions. Meanwhile, use a hand blender to smooth out the sauce, season it, and return it to the stove to keep warm while the pasta cooks. 

Drain the pasta and combine it with the sauce. Serve in dishes with shaved Parmesan and, if desired, rocket leaves.
