Easy Feta Salad with Watermelon

My watermelon-feta salad has a taste profile that is nearly too good to resist, with a refreshing and light texture.  

My family enjoys buying as many watermelons as possible to consume throughout the summer, when they are at their best.  

In addition to eating delicious watermelon wedges, we also like to combine them with fresh herbs and feta cheese to make a cool salad!  

This recipe for watermelon salad is really easy to prepare, tastes amazing, and has the ideal ratio of sweet and salty ingredients.

Watermelon: To simplify and expedite the preparation process, I use a seedless watermelon for this salad. I search for one that feels substantial and strong when I'm in the store  

Feta Cheese: Feel free to use whatever feta you choose; I personally prefer sheep's milk feta. It tastes better, therefore I normally purchase the variety that is sold in brine.   

For this salad, we'll chop the feta into cubes, so exclude the already-crumbled variety.  

Fresh Herbs: Mint is a classic pairing with watermelon, but I love adding fresh parsley, too.
